Fish Stew (Brodetto di Pesce)

Brodetto di Pesce is a rich and colorful fish soup typical of the Italian coasts, with each region having its own variant. This version represents the Adriatic variation.
Ingredienti
- 1.5 kg Mixed fish (squid, shrimp, scorpion fish, etc.)
- 400 grams Peeled tomatoes
- 1 unit Onion
- 2 cloves Garlic
- 1 unit Chili pepper
- 200 milliliters White wine
- 500 milliliters Fish broth
- as needed Parsley
- 3 tablespoons Extra virgin olive oil
- to taste Salt
- to taste Pepper
Preparazione
- Clean the fish, cut larger ones into pieces and leave the small ones whole.
- In a large pot, sauté chopped onion, garlic, and chili pepper in olive oil.
- Add the fish and briefly sauté. Deglaze with white wine.
- Add crushed tomatoes and fish broth, simmer for about 20 minutes.
- Season with salt, pepper, and chopped parsley before serving.
Note
Brodetto is ideally served hot with toasted bread slices or a slice of polenta.
