Fish Stew (Brodetto di Pesce)

Brodetto di Pesce is a rich and colorful fish soup typical of the Italian coasts, with each region having its own variant. This version represents the Adriatic variation.

Ingredienti

  • 1.5 kg Mixed fish (squid, shrimp, scorpion fish, etc.)
  • 400 grams Peeled tomatoes
  • 1 unit Onion
  • 2 cloves Garlic
  • 1 unit Chili pepper
  • 200 milliliters White wine
  • 500 milliliters Fish broth
  • as needed Parsley
  • 3 tablespoons Extra virgin olive oil
  • to taste Salt
  • to taste Pepper

Preparazione

  1. Clean the fish, cut larger ones into pieces and leave the small ones whole.
  2. In a large pot, sauté chopped onion, garlic, and chili pepper in olive oil.
  3. Add the fish and briefly sauté. Deglaze with white wine.
  4. Add crushed tomatoes and fish broth, simmer for about 20 minutes.
  5. Season with salt, pepper, and chopped parsley before serving.

Note

Brodetto is ideally served hot with toasted bread slices or a slice of polenta.
